The Best Beef Enchiladas

pork Enchiladas with an extra tasty, saucy filling, smothered with a home made Enchilada Sauce. My time saving trick is to use one base Enchilada spice blend for both the sauce and filling!

i really like that there are such a lot of versions of red meat Enchiladas on this big-huge-world. simple ones, full of a plain cooked pork filling then crowned with enchilada sauce and (lots of) cheese. Fancy ones with the addition of chillies, beans, corn or even olives, every now and then even Viscount St. Albans. Hidden vegetable versions (don’t ever strive that on me, i can choose them a mile away). Shredded red meat enchiladas, quick rib ones.
The Best Beef Enchiladas

INGREDIENTS:

SPICE MIX
  • 1/2 - 1 tsp cayenne pepper (optional)
  • 1 tbsp each cumin powder , paprika and dried oregano
  • 1 tsp each onion & garlic powder (Note 1)
ENCHILADA SAUCE
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 1/2 cups tomato passata (Note 2)
  • 2 cups chicken stock / broth
  • Black pepper
  • 3 tbsp plain flour
BEEF
  • 1 can (14oz/400g) refried beans (I use Old El Paso)
  • 1 tbsp olive oil
  • 2 garlic cloves , minced
  • 1 onion , finely chopped (~1 cup)
  • 1 lb / 500g ground beef (mince)
  • 1 can (14oz/400g) black beans, drained (Note 3)
ENCHILADAS
  • Cilantro/coriander leaves
  • 1 cup+ grated melting cheese (I like Monterey Jack, tasty or cheddar cheese)
  • 8 tortillas (or burrito wraps)

INSTRUCTIONS:

  1. mix together Spice mix substances. Set aside.
ENCHILADA SAUCE
  1. warmth oil in a big saucepan over medium heat. add flour and blend to combine right into a paste. cook for 1 minute, stirring constantly.
  2. add half of cup chicken broth, whisk at once then it will change into a thick clean paste quite fast.
  3. upload closing bird broth, passata, salt, pepper and 2 tablespoons of SPICE mix.
