Popsicles
home made French vanilla ice cream, a raspberry-strawberry puree and entire blueberries unite to make a patriotic Popsicle, perfect for your 4th of July celebrations. The Rocket pops of my formative years have been the muse in the back of these purple, white and blue treats however my tackle them is a touch bit extra healthful with the addition of home made ice cream and blueberries, raspberries and strawberries rather than sugary colored juices .
I recommend the use of frozen blueberries so that the berries don’t bleed purple into the ice cream. The vanilla ice cream recipe yields one quart of ice cream so that you will have leftovers to experience. if you don’t have time to make ice cream you can constantly use your preferred shop-sold logo.

INGREDIENTS:
French Vanilla Ice Cream- 3 eggs
- 2 cups milk (or half and half)
- 1 cup sugar
- 2 cups heavy cream
- 2 tsp vanilla extract
Raspberry-Strawberry Puree
- 1 cup frozen strawberries
- 1 cup frozen raspberries
- ½ – 1 cup Passion-Orange-Guava juice
- Popsicles
- 1 cup frozen blueberries
- Popsicle molds or paper cups
INSTRUCTIONS:
French Vanilla Ice Cream- In a large saucepan, beat the eggs, milk and sugar until well blended.
- Cook the egg mixture over low heat, stirring constantly, until thickened. It will take about 10 minutes and should smoothly coat the back of a wooden spoon.
- Let the mixture cool.
- Add the heavy cream and the vanilla.
- Stir until blended and refrigerate the mixture until it is completely chilled, for several hours or up to overnight.
- Following the instructions of your ice cream maker, pour the chilled mixture into your machine and stir it until the ice cream forms. It will typically be more like soft-serve when you first make it.
- If you want firmer ice cream, transfer it to a sealed container and let it freeze for several hours until it hardens.
- Blend the ingredients until a smooth juice forms.
- Leave some chunks of fruit if desired.
- Popsicles
- Working with one Popsicle mold at a time, pour the raspberry-strawberry puree in to half of the mold.
- Stir in a few frozen blueberries.
- Insert the Popsicle sticks and place the molds in the freezer for an hour or until the puree starts to harden.
- Remove the Popsicle sticks and pour softened vanilla ice cream into the rest of the Popsicle mold.
- Stir in a few frozen blueberries.
- Insert the Popsicle sticks and place the molds back in the freezer.
- Let the Popsicles freeze for several hours or until they are completely frozen.
