Chicken Tortellini Soup

not anything screams secure like a large bowl of Italian fowl Tortellini Soup. easy and comforting – this soup hits the spot every-single-time.

Confession: We’re already knee deep in October and that i’m deep in denial. Is summer truely over? Is Fall actually in complete swing? Is wintry weather clearly creeping up like mega rapid?

INGREDIENTS: 

For the chicken:

  • 1 pound skinless, boneless chicken breast tenders
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon chili powder
For the soup:
  • 4 stalks celery, diced
  • 3 tablespoons olive oil
  • 4 large carrots, peeled and diced
  • 8 cloves garlic, minced
  • 2 large onions, finely diced
  • Big pinch of salt
  • 1/2 cup fresh parsley, chopped
  • (2) 32 oz containers chicken stock
  • 1 bay leaf
  • Juice of 1 lemon, plus more for serving
  • 3 cups cheese tortellini
  • 1 cup finely grated Parmesan cheese

INSTRUCTIONS:

  1. Preheat oven to 375 degrees (F). area chook tenders in a huge baking dish covered with parchment paper.
